The bags we use have an off-gassing valve which lets carbon dioxide out, but does not let oxygen in. Oxygen can “stale” the coffee. Sealed in the bag, the coffee will be good for several weeks. These bags are 'omni-degradable', and will turn into non-harmful elements when they come into contact with microbes present in the soil or in the ocean.
